Ingredients

  • 1 small watermelon (cut in half lengthwise and hollowed out)

Fruit for filling

  • Fresh watermelon balls (scooped from the melon you removed)
  • Diced mango or peaches
  • Peeled kiwi (sliced into rounds or half-moons)
  • Dragon fruit (cubed or scooped)

For the Clear Jelly

  • 3 cups clear liquid (white grape juice, apple juice, or clear coconut water)
  • 3 tablespoons unflavored gelatin powder (or agar-agar powder)
  • 1/2 cup cold water (for blooming)
  • 2 tablespoons sugar (optional, depending on juice sweetness)

Method

  1. 1

Prep the Rind: Cut your watermelon in half, scoop out the red flesh inside (save some to make melon balls), and pat the inside of the empty rinds completely dry with a paper towel. Prop them up in bowls so they stay level.

  2. 2

Cut the Fruit: Prepare your fruits—scoop watermelon balls, slice your kiwi, and chop your mango and dragon fruit into bite-sized pieces.

  3. 3

Fill the Rind: Pack the hollowed watermelon rinds tightly with your colorful mix of fruits.

  4. 4

Bloom the Gelatin: Pour 1/2 cup of cold water into a bowl, sprinkle the gelatin powder over it, and let it sit for 5 minutes.

  5. 5

Make the Liquid Jelly: Heat your 3 cups of clear juice and sugar in a saucepan over medium-low heat until warm. Stir in the bloomed gelatin until completely dissolved and clear. Remove from heat and let it cool until lukewarm.

  6. 6

Pour and Chill: Pour the lukewarm jelly liquid gently over the fruits in the watermelon rinds until it fills all the gaps. Place them in the refrigerator for at least 4 hours until completely firm.

  7. 7

Slice and Serve: Use a sharp knife to slice right through the watermelon boat into clean, crystal-clear wedges.
